As part of my detox Challenge I have been eating really clean healthy foods in attempt  to cleanse my body of all the gunk. Usually about every two days I make a green smoothie and everyday I will make sure to eat a salad with dark leafy greens.  Dark leafy greens are full of a ton of vitamins that help the body speed up the detoxification process.

Below I show you one of my green smoothie recipes. I call this one my sunset passion, because it contains peaches, almost the color of the sun and red strawberries which invokes passion to me.  It contains Ice,  water, kefir,  honey, spinach and my handy dandy amazing super grass supplements. I just take about four of them and open up the gel case and pour the ingredients into the smoothie machine.

I usually buy the supplements from whole foods, but you can also get them on amazon.

Green Smoothies

The first thing that I do is assemble all the ingredients together as you can see in photo above. About a cup n half of spinach, 1 bag of organic frozen peaches (semi – thawed).  1 cup of ice, 1 cup of water because  I like my smoothies sort of creamy and not as thick. 4 Amazing green grass supplements and honey. Just about 1 tablespoon or two depending on your taste buds.

You have to make sure it is pure Un-refined honey, that is not heated or pasteurized. Because you will be missing out on valuable vitamins if it is. Honey is considered a miracle sweetness because of all the antioxidants it contains and the healing properties it as able to produce.

I place everything in the container together.


Then the last step is just to blend, I sometimes add about a half cup of kefir which is a natural milk probiotic for extra creaminess but you can also add coconut milk, water, raw milk whatever fits your taste.

Then “Wa, La you have a simple easy tasty green smoothie.  You can drink smoothies twice a day with salads for a couple of days and you are already on a natural detox diet. That is filling and does not taste bad at all.

There you go.

Once smooth  you are all done and ready to enjoy your tasty, healthy green smoothie. You could also make a pineapple and banana one with the spinach and amazing green grass. Absolutely delicious!

This is one smoothie that is kid tested, mother approved. My kids love it.

I had the chance to make a really delicious dish last night, one that was really really good! Sometimes it can be a struggle finding recipes that my whole family enjoys and will eat all together at one time. Trial and error is something that I have come to realize when you have kids. They all have different palates and like to eat different ways, and when you have four small little ones like I do all of different ages. Ranging from 2 – 10 your bound to have picky eaters. However, I always cook to please them, and sometimes I like to please my self by making gourmet meals that are light, tasty and seems as if you have brought the restaurant right into your own home. I love seafood and pasta, that combination has always been my favorite .

So I decided to try out a new creamy seafood dish, that I have been eying for quite some time now, I said what the hell. Tonight's my night and if they don't like it than to bad. (just kidding)

The seafood dish is called The Alla Betsey Creation by Ree Drummond  whose sister came up with the dish for a girls night out sort of thing.  Ree's  Book is called The Pioneer Woman Cooks  – Recipes from an Accidental Country Girland features very mouth watering dishes. That are so easy to make and does not require a lot of effort. Even the novice cook can get this cookbook and begin cooking like a pro. Because the Pioneer Woman lays everything out in visual detail and side by side order telling you what to do step by step.  This is a great starter book for anyone wanting to learn how to cook and a great gift to give a new mom to be at a baby shower.  I have to used this book time and time again and have never been dissapointed yet.

ok, enough about the book.

The recipe that  I choose was Alla Betsey a seafood pasta combination that is to die for, I had no idea that when I would start to eat this pasta dish that it was going to be that good.

A total Shocker, but in a good way.

I decided that when I was making the dish I would not switch out the penne pasta for whole wheat pasta but use, Farfalle Pasta which is just as good and does not include all that nasty chemicals and gives a more authentic flavor.

The entire meal only consists of a couple of ingredients and produce you already have in your fridge.


  1. 1 pound of penne pasta
  2. 1 pound of large shrimp, however I used a pound and a half. ( I have a large family)
  3. 2 tablespoons of butter
  4. 2 tablespoons of olive oil
  5. 1 small onion, finely chopped
  6. 2 Garlic cloves chopped
  7. 1/2 cup of dry white wine, cooking white wine is what I used.
  8. one 14.5 ounce can of tomato sauce
  9. 1 cup of heavy cream, organic ( optional) maybe some regular milk for thinning
  10. 2 tablespoons of parsley
  11. 6 basil leaves chopped
  12. salt
  13. pepper

Clean the shrimp and devin, uncooked large shrimp, than in a small non-stick skillet add the 1 tablespoon of butter and the 1 tablespoon of olive oil. When  pan is hot add the shrimp stir and cook until pink. Remove the shrimp to a plate to cool and drain the juice out of the pan.  Chop  the shrimp  into bite size pieces. Next chop the onion and in the same skillet add the remaining butter and olive oil until melted. Add the onion and garlic and cook about 3 minutes until translucent.  Pour in the white wine and reduce until it is almost evaporated.  Pour in the tomato sauce simmer for about a minute, than add the cream on low. Mix well and reduce to simmer.  Finish by adding the shrimp to the pan, add the herbs salt and pepper to taste. Add the cooked pasta,  stir to mix well and fully coated and serve warm.

Remember to cook the pasta first before you do anything to al dente and sit aside while you do every thing else.

As part of the second follow up on how make somecool green salads I wanted to share with you my favorite  organic green smoothie that I make at least two to three times a week. I don't do this everyday but at least three times a week.  A couple of years ago after the birth of my last son and already being anemic my iron had become very low even with the help of supplements. And I need something that was going to help me get my iron back up. I am constantly busy with four small boys and having iron helps you to have energy. Iron is needed for your blood to have proper circulation and if it does not have that your blood is not getting enough oxygen to your blood supply which leads to feeling tired or lack of energy.

Even though you can take supplements they are better taken in their raw form or broken down with food added to them to aid with digestion. When you eat real food you body recognizes what it is and is able to transfer that into energy right away. I like to try new recipes out here and there all the time. It helps to keep me from getting bored when I eat food. As a mom of four growing boys and and healthy husband who is on a whole health kick these past couple of weeks. It helps to have new ideas that you can use to incorporate into your afternoon meal and dinner plans.

Ryan my husband has lost a total of 20 pounds in less than 2 1/2 weeks and it all comes from eating clean and working out on a regular basis. But it can get tempting to eat junk if you don't allow yourself to jazz up your eating plans a bit.

I'm a die hard foodie and hate, hate sticking to or eating the same thing over and over again. Now with the kids we have our staples like the regulars for any family. But I want my kids to have balanced ideas of all sorts of foods when they get older and a love for fruits and vegetables. That is why on their plates I have more veggies and healthy carbs than anything else with a nice size portion of protein for them eat. My family eats meat, and I am no vegetarian all though we do eat vegan meals from time to time at least once a week.

I believe that healthy fats that come from good fats like coconut oil and olive oil are great for children and adults. Coconut oil has many healing properties for hair and body and olive oil has tons of it own like reducing cancer, preventing heart attacks and lowering blood sugar. So just by changing small things in your diet like adding olive oil to your salad dressing and making them your selves for scratch can go a long way.

I will discuss the other benefits of Coconut Oil in another post – stay tuned for that.

Here is one great Olive Oil Recipes that you can use to make right away for your family that I am sure you will love!

Olive Parmesan Salad


1 large bulb fennel, core and stems removed, fronds reserved

3 navel oranges, peeled

1/4 cup extra virgin olive oil

2 tablespoons minced shallots

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

2 cups baby spinach, stems removed, rinsed well and patted dry

20 oil-cured black olives

2 ounces Parmesan, thinly shaved with a vegetable peeler


Remove core and stems from fennel bulb. Keep fronds. Cut fennel into halves and slice. Next, slice oranges over a cup or bowl to preserve juice. Using the bowl with the orange juice, add shallots, oil, salt and pepper and whisk together. Add in orange segments, spinach and fennel, tossing to coat well. Divide salad and top with olives, cheese and fennel fronds. Serve immediately.

Garden Greens and Bacon Salad


2 tsp. granted yellow onion

1 tsp. sea salt

½ tsp. freshly ground pepper

2 Tbsp. Dijon mustard

½ C. extra virgin oil

½ tsp. freshly ground lemon juice

10 oz. spinach or greens of choice

6 slices nitrite free natural bacon, cut crosswise into ½ inch strips

6 to 8 button mushrooms, sliced

½ red onion, thinly sliced

3 hard-boiled eggs, peeled and chopped


Combine the yellow onion, salt, pepper, mustard, and vinegar in a food processor or blender. Process the items for 1 to 2 minutes until smooth. With the motor running slowly, add the oil to create an emulsion. Pour the dressing in a small bowl and stir in the lemon juice. Taste and adjust the seasoning if necessary. Cover with plastic wrap set aside. To prepare the salad immerse the spinach in a large amount of water, swish the leaves to rinse well, and drain. Repeat until no grit or dirt is visible in bottom of the sink. Pick off any large parts or stems and tear into bite size pieces. Dry in a lettuce spinner and transfer to a large salad bowl. Place in refrigerator and cover with paper towel until time to serve.

20 minutes before serving in a small sauce pan over medium heat, sauté the bacon for 5 to 6 minutes, until crisp. Remove the spinach from the refrigerator, add the mushrooms, onions, and eggs to bowl, and toss again. Remove the bacon, drain the grease and add to the salad, toss well. Serve immediately.
